  • 200g dark chocolate, chopped
  • 1 cup heavy cream
  • 3 large eggs

Refrigerate until needed

In a small saucepan, heat 1/4 cup water until warm

Sprinkle gelatin powder over 1/4 cup cold water, let it bloom, then dissolve in the warm water

Add the gelatin mixture to the melted chocolate and stir

Gradually fold the chocolate mixture into the beaten eggs until smooth

Carefully fold in the whipped cream until well combined

Line the base of your molds with crushed biscuits to create the crust

Pour the mousse mixture over the biscuit base

Refrigerate the entremets for at least 4 hours or until set

Once set, garnish with fresh berries before serving
