Gajar Ka Murabba

Enjoyed as a dessert or a condiment, Gajar Ka Murabba is a traditional Indian sweet and tangy carrot preserve that is simple to make. Grated carrots, sugar, and flavorful spices are used in its preparation.

Ingredients:

  • 1 kg carrots, peeled and grated
  • 500 grams sugar
  • 1/2 cup water
  • 1/2 tsp cardamom powder
  • 1/4 tsp saffron strands
  • 2 tbsp lemon juice
  • 1/4 cup chopped almonds
  • 1/4 cup chopped pistachios
  • 1/4 cup raisins

Instructions:

In a large pan, combine grated carrots and sugar

Cook on low heat, stirring continuously until the sugar dissolves and the carrots release their moisture

Add water, cardamom powder, and saffron strands

Mix well

Cook on medium heat, stirring occasionally, until the mixture thickens and the carrots become translucent

This may take about 20-25 minutes

Stir in lemon juice and cook for an additional 5 minutes

Remove from heat and let it cool to room temperature

Once cooled, add chopped almonds, pistachios, and raisins

Mix well

Transfer the murabba to sterilized glass jars and seal them tightly

Store in a cool, dry place for a few weeks before consuming to allow the flavors to develop
