Ingredients:
- 1 cup rolled oats
- 1 cup strong brewed Irish tea, cooled
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semisweet chocolate chips
- 1/2 cup chopped dark chocolate
- 1/2 cup chopped walnuts optional
Instructions:
Warm your oven up to 350 F 175C and put paper liners in a muffin tin
Rolling oats and brewed Irish tea should be mixed together in a bowl
Soak them for 10 to 15 minutes, or until the oats are soft and most of the tea is soaked up
Put the melted butter, brown sugar, granulated sugar, eggs, and vanilla extract in a different bowl
Use a whisk to mix the ingredients well
Sift the all-purpose flour, cocoa powder, baking powder, baking soda, and salt together in a different bowl
Slowly add the dry ingredients to the wet ones and mix them together until they are just combined
Before adding the chopped dark chocolate, chopped walnuts, and chocolate chips that have been soaked, make sure the oats are well mixed
Fill up each muffin pan cup about two thirds of the way to the top with muffin batter
After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
For a few minutes, let the muffins cool in the pan
Then, move them to a wire rack to cool completely
