Ingredients:

  • 1 cup 2 sticks unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon instant coffee granules
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups semisweet chocolate chips

Instructions:

Preheat your oven to 350F 175C

In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy

Add the eggs and vanilla extract, and mix until well combined

In a separate bowl, whisk together the flour, cocoa powder, instant coffee granules, baking soda, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until a soft cookie dough forms

Fold in the semisweet chocolate chips

Drop rounded tablespoons of dough onto ungreased baking sheets, leaving enough space between each cookie

Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers are still soft

Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely
