Caramel Peanut Protein Truffles

These vegan caramel peanut protein truffles are a delightful blend of sweet caramel, nutty peanuts, and rich chocolate. They make for a satisfying and indulgent snack thats also packed with protein.

Ingredients:

  • 1 cup pitted dates
  • 1/2 cup roasted peanuts
  • 1/4 cup vegan caramel sauce
  • 2 tablespoons vegan protein powder
  • 1/4 teaspoon salt
  • 1/4 cup vegan dark chocolate chips

Instructions:

In a food processor, combine dates, peanuts, caramel sauce, protein powder, and salt

Blend until mixture forms a thick, sticky dough

Roll mixture into small balls and place them on a baking sheet lined with parchment paper

Place in the freezer for 15 minutes to firm up

In the meantime, melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth

Remove truffles from the freezer and dip each one into the melted chocolate, coating evenly

Return truffles to the baking sheet and place them back in the freezer for another 10 minutes to set the chocolate

Once set, store truffles in an airtight container in the refrigerator until ready to serve
