Ingredients:
- 2 ripe bananas, mashed
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup buttermilk
- For the Cinnamon Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with cupcake liners
In a bowl, whisk together the mashed bananas and buttermilk
Set aside
In another bowl, cream together the softened butter and sugar until light and fluffy
Beat in the eggs one at a time, then stir in the vanilla extract
In a separate bowl, combine the flour, baking soda, baking powder, salt, and ground cinnamon
Gradually add the dry ingredients to the butter mixture, alternating with the banana mixture, beginning and ending with the dry ingredients
Mix until just combined
Spoon the batter into the prepared cupcake liners, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean
Remove the cupcakes from the oven and let them cool in the tin for 5 minutes, then transfer to a wire rack to cool completely
For the Cinnamon Cream Cheese Frosting: In a mixing bowl, beat together the softened cream cheese and butter until smooth and creamy
Gradually add the powdered sugar, vanilla extract, and ground cinnamon, and continue to beat until well combined
Once the cupcakes are completely cool, frost them generously with the Cinnamon Cream Cheese Frosting
Sprinkle a pinch of ground cinnamon on top of each cupcake for garnish, if desired
