Baked Shrimp Scampi Sushi

This recipe is a mix of Japanese sushi and Italian shrimp scampi. The buttery garlic shrimp and sushi rice make for a unique and tasty roll.

Ingredients:

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 8 large shrimp, peeled and deveined
  • 2 tablespoons butter, melted
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1/4 cup chopped parsley
  • Nori sheets
  • Soy sauce and wasabi for serving

Instructions:

Prepare sushi rice by rinsing it under cold water until water runs clear

Cook rice with water according to package instructions

In a small saucepan, heat rice vinegar, sugar, and salt until dissolved

Mix with cooked rice and let it cool

Preheat oven to 375F 190C

Place shrimp in a baking dish

In a small bowl, combine melted butter, minced garlic, lemon juice, and chopped parsley

Pour over shrimp

Bake shrimp in preheated oven for 10-12 minutes or until cooked through

Place a layer of sushi rice on a nori sheet, leaving a 1-inch border at the top

Arrange baked shrimp along the center of the rice

Roll sushi tightly using a bamboo mat

Slice sushi roll into bite-sized pieces

Serve with soy sauce and wasabi
