Roasted Squash with Yogurt, Walnuts, and Spiced Green Sauce

This vegan recipe features roasted squash topped with creamy vegan yogurt, crunchy walnuts, and a vibrant spiced green sauce. Its a delightful combination of textures and flavors that makes for a satisfying and nourishing meal.

Ingredients:

  • 1 medium squash, such as butternut or acorn, peeled, seeded, and cut into cubes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup vegan yogurt
  • 1/4 cup chopped walnuts
  • For the spiced green sauce:
  • 1 cup fresh parsley leaves
  • 1/2 cup fresh cilantro leaves
  • 2 cloves garlic
  • 1 green chili pepper, seeded and chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

Turn on the oven and heat it up to 400F 200C

Put the cubed squash on a baking sheet and season it with salt and pepper

Roast in an oven that has already been heated for 25 to 30 minutes, stirring every 15 minutes, until soft and lightly browned

Make the spiced green sauce while the squash is roasting

To do this, blend the parsley, cilantro, garlic, chili pepper, lemon juice, olive oil, salt, and pepper until the sauce is smooth

Move the squash to a serving platter after its done roasting

Put vegan yogurt on top of the roasted squash

Put walnuts that have been chopped on top of the yogurt

Put some spiced green sauce on the side and serve the roasted squash with it
