These Bacon Cheddar Spaghetti Squash Fritters are a delightful combination of crispy bacon, cheesy goodness, and the subtle sweetness of spaghetti squash. Perfect as a side dish or appetizer

Ingredients:

  • 2 cups cooked spaghetti squash, drained and cooled
  • 4 slices of bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/4 cup finely chopped green onions
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions:

In a large bowl, combine the cooked spaghetti squash, crumbled bacon, shredded cheddar cheese, chopped green onions, all-purpose flour, grated Parmesan cheese, eggs, garlic powder, salt, and pepper

Mix until well combined

Heat vegetable oil in a frying pan over medium-high heat

Scoop spoonfuls of the spaghetti squash mixture and carefully drop them into the hot oil

Flatten them slightly with a spatula and fry until they are golden brown on both sides, about 2-3 minutes per side

Remove the fritters from the oil and place them on paper towels to drain excess oil

Serve the Bacon Cheddar Spaghetti Squash Fritters hot, garnished with extra shredded cheddar cheese and green onions if desired
