Watermelon Fudge

This Watermelon Fudge is a delightful treat for summer. Its vibrant colors and sweet watermelon flavor make it a perfect dessert for picnics and gatherings. Enjoy the taste of summer in every bite

Ingredients:

  • 2 cups white chocolate chips
  • 1/2 cup sweetened condensed milk
  • 1/2 cup watermelon flavored gelatin powder
  • 1/4 cup unsalted butter
  • 1/2 cup mini chocolate chips for seeds
  • Red and green food coloring optional

Instructions:

Line an 8x8 inch square baking pan with parchment paper, leaving some overhang for easy removal

In a microwave-safe bowl, combine the white chocolate chips, sweetened condensed milk, and unsalted butter

Microwave in 30-second intervals, stirring in between until fully melted and smooth

Stir in the watermelon flavored gelatin powder until well combined

Add a few drops of red food coloring to achieve a watermelon color, and a few drops of green for the rind if desired

Pour the mixture into the prepared baking pan and spread it evenly

Sprinkle the mini chocolate chips on top to resemble watermelon seeds

Chill in the refrigerator for at least 2 hours or until set

Once set, use the parchment paper overhang to lift the fudge out of the pan

Cut it into squares or rectangles
