A tasty sweet potato casserole with a crunchy pecan streusel topping thats great for holiday parties or other special events.

Ingredients:

  • 4 sweet potatoes, cooked and mashed
  • 1/2 cup brown sugar
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 2 tbsp cold butter, cubed

Instructions:

Preheat oven to 350F 175C

Grease a 9x13 inch baking dish

In a large bowl, mix together mashed sweet potatoes, 1/2 cup brown sugar, eggs, milk, melted butter, vanilla extract, and salt until well combined

Spread evenly in the prepared baking dish

In a separate bowl, combine chopped pecans, 1/2 cup brown sugar, flour, and cold cubed butter

Mix until crumbly and sprinkle over the sweet potato mixture

Bake in preheated oven for 25 to 30 minutes, or until the topping is golden brown
