These Keto Pumpkin NOatmeal Cookies are a tasty treat that doesnt have any grains, carbs, or sugar. Theyre perfect for satisfying your sweet tooth without going against your ketogenic lifestyle. They taste great with pumpkin and warm spices, so theyre great for any fall or winter event.

Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/3 cup pumpkin puree
  • 1/4 cup melted coconut oil
  • 1/4 cup powdered erythritol or preferred keto-friendly sweetener
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/4 cup sugar-free chocolate chips optional

Instructions:

Preheat oven to 350F 175C and line a baking sheet with parchment paper

In a mixing bowl, combine almond flour, coconut flour, pumpkin puree, melted coconut oil, powdered erythritol, vanilla extract, cinnamon, nutmeg, cloves, and salt

Mix until well combined

If using, fold in sugar-free chocolate chips

Scoop dough using a tablespoon and roll into balls

Place them onto the prepared baking sheet and flatten slightly with your palm

Bake for 12-15 minutes, or until edges are golden brown

Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
