Ingredients:
- 2 cups almond flour
- 1/2 cup coconut flour
- 1/2 cup coconut sugar
- 1/4 cup coconut oil, melted
- 4 large eggs
- 1/2 cup almond milk
- 2 teaspoons pure vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions:
Preheat your oven to 350F 175C
Grease a 9-inch 23 cm round cake pan and line the bottom with parchment paper
In a large mixing bowl, combine the almond flour, coconut flour, coconut sugar, baking soda, and salt
In a separate bowl, whisk together the melted coconut oil, eggs, almond milk, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until well combined
Pour the cake batter into the prepared cake pan and spread it out evenly
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean
Allow the cake to cool in the pan for 10 minutes, then remove it from the pan and let it cool completely on a wire rack
Once the cake is cooled, you can frost it with your favorite Paleo-friendly frosting or enjoy it plain
