Ingredients:

  • 1 can 15 oz pumpkin puree
  • 1/2 cup coconut cream
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 cup vegan graham cracker crumbs
  • 2 tbsp melted vegan butter
  • 1/2 cup coconut whipped cream
  • 1/4 cup chopped pecans

Instructions:

In a mixing bowl, combine pumpkin puree, coconut cream, maple syrup, vanilla extract, and pumpkin pie spice

Mix until smooth

In another bowl, mix graham cracker crumbs and melted vegan butter until well combined

Layer the bottom of serving glasses with the graham cracker mixture

Top with a layer of the pumpkin mixture

Repeat layers until glasses are filled, ending with a dollop of coconut whipped cream on top

Garnish with chopped pecans

Chill in the refrigerator for at least 30 minutes before serving
