Sweet and Sour Chicken

A traditional Chinese takeaway favorite featuring crunchy chicken dipped in a zesty sauce of sweet and sour.

Ingredients:

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • Oil for frying
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup pineapple chunks
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 3 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes

Instructions:

In a bowl, mix cornstarch and flour

Dip chicken pieces in beaten egg and coat with the flour mixture

Heat oil in a pan and fry chicken until golden brown

Drain on paper towels

In another pan, saut bell pepper, onion, and pineapple chunks until tender

In a saucepan, combine ketchup, rice vinegar, brown sugar, soy sauce, salt, and red pepper flakes

Simmer until thickened

Pour the sauce over the sauted vegetables and add fried chicken

Stir to coat

Serve hot with steamed rice
