Green Pea and Spinach Hummus

This hummus with green peas and spinach is a colorful, nutrient-dense take on the classic dish. Its full of vitamins and antioxidants and tastes great as an appetizer or snack. Its packed with the goodness of spinach and green peas.

Ingredients:

  • 1 cup frozen green peas, thawed
  • 1 cup fresh spinach leaves
  • 1 can 15 ounces chickpeas, drained and rinsed
  • 2 cloves garlic, minced
  • 3 tablespoons tahini
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Water as needed for desired consistency
  • Fresh parsley and olive oil for garnish

Instructions:

Put the chickpeas, spinach, green peas, tahini, olive oil, lemon juice, ground cumin, salt, and pepper in a food processor and pulse until the ingredients are well mixed

Blend the ingredients together until the mixture is smooth and creamy

If you need to, add water to get the consistency you want

If the seasonings need to be changed, add more salt, pepper, or lemon juice and taste again

Move the hummus with spinach and green peas to a bowl for serving

Add a little olive oil and fresh parsley as a garnish

This can be used as a dip for crackers, pita bread, or your favorite vegetables
