Enjoy this tasty Stone Fruit Almond Tart that doesnt have any refined sugar or gluten. The nutty almond flour crust goes well with the sweet and juicy stone fruits, making the flavors just right. This tart will be a hit whether you serve it for a special event or just because you want something sweet any day of the week.

Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup coconut oil, melted
  • 2 tablespoons maple syrup
  • 1/4 teaspoon salt
  • 1/2 teaspoon almond extract
  • 2 cups assorted stone fruits such as peaches, plums, and apricots, sliced
  • 1 tablespoon arrowroot powder
  • 2 tablespoons lemon juice
  • 2 tablespoons sliced almonds, for topping
  • Optional: fresh mint leaves, for garnish

Instructions:

Preheat the oven to 350F 175C

In a bowl, combine almond flour, coconut flour, melted coconut oil, maple syrup, salt, and almond extract

Mix until a dough forms

Press the dough into a tart pan, covering the bottom and sides evenly

In another bowl, toss the sliced stone fruits with arrowroot powder and lemon juice until coated

Arrange the coated fruits on top of the tart crust

Sprinkle sliced almonds over the fruits

Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the fruits are tender

Let the tart cool before slicing

Garnish with fresh mint leaves, if desired, before serving
