Creamy Tomato Basil Soup

Ingredients:

  • 1 can 28 oz crushed tomatoes
  • 1/4 cup olive oil
  • 1 cup finely chopped onions
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

Put olive oil in a big pot and heat it over medium-low heat

Put in the chopped garlic and onions, and cook until the onions are soft

Add oregano, basil, and crushed tomatoes and mix them in

Bring it to a boil

After adding the chicken broth, bring it to a simmer and cook for another 10 minutes

Blend the soup until its smooth with an immersion blender

Add the heavy cream and season with pepper and salt to taste

Simmer for five more minutes to mix the flavors

Add fresh basil leaves on top and serve hot
